Coffee and Amarula Pudding




20 ml coffee powder
125 ml hot cooked water
300 g marshmallows
1 tin (410 g) of cooled, evaporated milk
30 ml Amarula
125 ml crushed nuts


  1. Dissolve the coffee in the water.
  2. Put the coffee in a big pan and add the marshmallows.
  3. Let it stand until the marshmallows are almost melted.
  4. In the meantime mix the evaporated milk until it stiffens.
  5. Stir the coffee-marshmallow mix to make sure all the marshmallows are melted.
  6. Add the coffee-marshmallow mix to the milk.
  7. Add the Amarula and the nuts.
  8. Spoon into glasses or into a big bowl.
  9. Put in the fridge to set.
  10. Dish up with whipped cream or fresh fruit.
