Make sure you stir the chutney every other minute until the sugar is completely dissolved, to make sure it doesn’t turn into a sandy mixture.
This recipe gives you about 300 ml of chutney and takes 30 minutes to make.
200 gr mango, diced
1 onion, diced
125 ml white wine vinegar
250 ml soft brown sugar
A half teaspoon masala
Just more than half a teaspoon of turmeric
2 cloves of garlic
1 cinnamon stick
- Place all ingredients in a glass bowl suitable for the microwave.
- Microwave the mixture for about 20 minutes. Stir the mixture every couple of minutes. If you let it cook too long it becomes sticky and syrupy. When this happens, add a bit of water and stir until the water has dissolved in the syrup.
- Put the chutney in a sterile bottle with a lid and seal.
Chutney is delicious with curries!
